Granny’s Coconut Pound Cake

My granny is famous for her coconut pound cake and always makes it perfect every time. It’s light and fluffy even for a pound cake. Absolutely delicious! Especially topped with my Aunt Janice’s homemade ice cream. Mmmmm!

I’ve had the recipe for years and I’ve made it once before I met Aaron. I’ve been promising him that I’d bake him her cake since we started dating. I figured it was about time I made good on my promise so I made it recently.

On her original recipe it said to use sweet milk so I used sweetened condensed milk and my pound cake came out thick and dense. Aaron LOVED it and raved about it. But I asked Granny if I did it right and she said she usually uses regular milk. Hmmm. I’ll give that a try next time.

An air bubble found it’s way into the cake and made the finished product lopsided.
